Caraway (Shah Jeera) or bunium persicum are a type of spice used while making masalas or spice mixes owing to their stronger flavor (relative to cumin seeds), for e.g. garam masala. The seed of a Shah Jeera is longer, thinner, and darker in color as compared to plain cumin seeds or jeera. Its much lighter in fragrance and aroma compared to cumin seeds and is mainly used to make or cook specific dishes such as kormas, Persian cuisine, and Mughlai food.
