A good non-stick pan is important to stop the rice sticking as it thickens.
Ingredients
- Cooking oil.
- 4 cups cooked red rice or brown rice
- 2 3/4 cups milk
- 1/3 cup packed brown sugar
- 1 cup chopped dried apricots, cranberries, cherries, or apples and raisins
- 2 tablespoons butter, softened
- 1 tablespoon chia seeds (optional)
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon finely shredded orange peel
Method:
- Lightly coat the inside of saucepan with oil and set aside.
- In a large bowl combine cooked rice, milk, and brown sugar. Stir in dried fruit, butter, chia seeds, cinnamon and nutmeg, and the orange peel. Transfer mixture to the saucepan.
- Cover and cook on low-heat. Stir gently before serving.
