A good non-stick pan is important to stop the rice sticking as it thickens.


  • Cooking oil.
  • 4 cups cooked red rice or brown rice
  • 2 3/4 cups milk
  • 1/3 cup packed brown sugar
  • 1 cup chopped dried apricots, cranberries, cherries, or apples and raisins
  • 2 tablespoons butter, softened
  • 1 tablespoon chia seeds (optional)
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon finely shredded orange peel


  • Lightly coat the inside of saucepan with oil and set aside.
  • In a large bowl combine cooked rice, milk, and brown sugar. Stir in dried fruit, butter, chia seeds, cinnamon and nutmeg, and the orange peel. Transfer mixture to the saucepan.
  • Cover and cook on low-heat. Stir gently before serving.
