Ghee rice is a popular flavoured south Indian rice recipe made with basmati rice and ghee (clarified butter). It is made especially for celebration feasts. It is served with a side dish choice of kurma curry or gravy. It is ideal if you want to finish any unused overnight or leftover rice too.
Ingredients
- 1 tbsp Ghee.
- 8 Cashew halves.
- 2 tbsp Raisins.
- 1 Bay leaf.
- 1 inch Cinnamon.
- 2 pods Cardamom.
- 5 Cloves.
- 1/2 tsp Peppercorns.
- 1/2 Onion (sliced).
- 1 Chilli (slit).
- 1 cup Basmati rice (soaked).
- 2 cups Water.
- 1 tsp Lemon juice.
- 1 tsp Salt.
Method:
- In a large pan heat 1 tbsp ghee and roast the cashews and raisins to golden brown and keep aside.
- Sauté bay leaf, cinnamon, cardamom, cloves and peppercorns. Then the onion and chilli till the onions turn golden brown.
- Add and roast the soaked basmati rice for 1 minute without breaking rice grains.
- Stir in the water, lemon juice and salt and bring to a boil.
- Cover and simmer for 20 minutes or pressure cook for 2 whistles.
- Fluff the rice gently without breaking rice grains.
- Garnish with the fried nuts and fruit and serve.
